WORD ON THE DOCK

We’ll start this week’s fishing report off with a big thank you from HR&G to all the hard-working dads out there leading and providing for their families! We hope y’all had a great Father’s Day. Now back to the scheduled programming. Without turning the fishing report into a weather report, I’ll just say that the weather guessers were wrong again for our area this past week in SWLA. Our leader, Captain Kirk Stansel, gave the full “rain rundown” and shared some useful information on our weekly Tuesday night Facebook live. The link is attached below if you’d like to check it out. Many of our crews woke up the morning of their trip to a completely new weather forecast and were able to get out on the water to chase a bite. The fishing has been a grind, but those that are sticking it out and working for them are putting together respectable boxes for the haul back home. There’ve been reports of quality trout showing up lately, with many of them taking a liking to a top water plug walking by them before the sun makes its way up. Redfish and a few flounder have been on the hit list as well, especially on wind driven days where protection is key. Live shrimp under a popping cork back in the marshes and along the channel have done the trick.

Redfish are extremely euryhaline, meaning they tolerate a huge range of salinities. In SWLA they can live in fresh marshes, brackish ponds, and gulf saltwater. That adaptability is one reason they thrive throughout the Louisiana coast.

A GENERATIONAL BLUEPRINT 

The excerpt in this photo, written by Bill Shearman of Lake Charles, is more than a tribute to Terry Shaughnessy’s legacy. It’s a reminder of what leadership actually looks like. Terry saw what gill nets were doing to our fishery long before most people were willing to admit it. He understood that if something didn’t change, future generations wouldn’t have the same opportunities he did. This didn’t just happen in the 80s and 90s — it’s happening again right now. Back then it was gill nets in our estuaries. Today it’s pressure from industrial menhaden operations in our shallow coastal waters. Different gear, same argument, same risk. 

Terry didn’t just recognize the problem — he did something about it. And that’s the part that matters. If Terry’s story teaches us anything, it’s that change doesn’t happen by accident — it happens when people get involved.

This Week’s Yummy Recipe

 

 

CAJUN SMOTHERED CABBAGE WITH SAUSAGE

Simple ingredients, big flavor. Smothered cabbage is one of those old-school Cajun dishes that turns a humble head of cabbage into something you’ll find yourself craving. Smoky sausage, the holy trinity, and slow cooking make all the difference. 

Recipe by: George Graham 

Serves: 6 

Ingredients 

  • 1 large head green cabbage, chopped  
  • 1 pound smoked sausage or Andouille, sliced  
  • 1 tablespoon bacon grease or vegetable oil  
  • 1 cup diced onion  
  • 1/2 cup diced celery  
  • 1/2 cup diced bell pepper  
  • 3 cloves garlic, minced  
  • 1 teaspoon Cajun seasoning  
  • 1/2 teaspoon black pepper  
  • 1/2 teaspoon salt  
  • 1/4 teaspoon cayenne pepper (optional)  
  • 1 cup chicken stock  
  • 2 tablespoons butter  
  • 2 tablespoons chopped green onions  

Instructions 

  1. Brown the sausage 
    In a large Dutch oven, cook the sausage over medium-high heat until browned. Remove and set aside.  
  2. Cook the trinity 
    Add bacon grease to the pot. Cook onion, celery, and bell pepper until softened, about 5 minutes. Add garlic and cook 1 minute.  
  3. Add cabbage 
    Stir in cabbage a little at a time until it all fits in the pot.  
  4. Season 
    Add Cajun seasoning, salt, pepper, and cayenne. Stir well.  
  5. Smother 
    Return sausage to the pot and pour in chicken stock. Cover and cook on low heat for 30–35 minutes, stirring occasionally.  
  6. Finish 
    Stir in butter and green onions.  
  7. Serve 
    Serve hot as a side dish or over rice as a meal.  

Notes 

  • The cabbage should be tender but not mushy.  
  • A splash of hot sauce at the table is highly encouraged.  
  • This pairs perfectly with fried fish, pork chops, or grilled sausage.  
  • Like most Cajun dishes, it’s even better the next day.
