Cajun Sausage and hash browns Muffins
Ingredients
Most Cajuns will eat sausage any way it’s cooked. Fried, saute, baked, stuffed in a duck, smoked, boiled or just about any way you can cook it. I especially like pan sausage cooked just about any way it’s done. This recipe is a great way to make sausage into a great breakfast. If you make too many that’s OK. They are great to snack on later. Enjoy
- 1 – pound of bulk pork sausage
- 1 – onion chopped
- 2 – cups of frozen hash browns thawed
- 1 – cup of shredded pepper jack cheese
- 3 – table spoons all-purpose flour
- 8 – eggs beaten
- 1 – cup of ranch dressing
- 1/2 cup of milk
Instructions
Brown the sausage with the onion in a large skillet. Stirring until sausage is crumbly. Drain and cool. Combine sausage, potatoes and cheese in a large bowl and mix well. Stir in the flour, add the eggs, salad dressing and milk and mix well. Fill greased muffin pan half way full and bake at 325 degrees for 15 to 20 minutes or until golden brown.
