This week’s report comes from professional guide Captain Mike Bares. Mike reports that strong incoming tide has mudded up the channel slowing up action there. Trout have been coming from Brad Vincent and Big Jack Reefs down on the south end of the lake fishing live shrimp under a popping cork. Early fishermen will find good action under working sea gulls using soft plastic lures and shrimp. Conditions should remain super for the upcoming week. July and August are great months to bring the “out of school youngsters” over for some great live bait fishing for trout and redfish under a popping cork. 6 to 8 oz peeled, deveined raw shrimp, cut in half lengthwise
1 tbs vegetable oil
1 cup diagonally sliced celery, cut 1/4 inch thick
1/2 medium onion, sliced
1 can (8 oz) French style green beans, drained
1/2 cup chicken broth*, divided
1 tsp cornstarch
1/4 tsp each sugar and salt
1 tbs soy sauce
1 cup hot cooked rice
Directions
Sauté shrimp in oil for 1 minute. Add celery, onion, green beans, and 2 tablespoons broth. Cover and steam for 1-1/2 minutes. Remove cover and stir once. Blend cornstarch, sugar, salt, soy sauce, and remaining broth. Stir into shrimp mixture. Cook and stir about 1 minute or until sauce is slightly thickened. Serve at once over beds of fluffy rice.
Makes 2 servings.
*Or use chicken bouillon cube or powder dissolved in 1/2 cup water.
