October Continues to Produce for Calcasieu Lake

This northern front has continued to piggyback into the week and has provided us with excellent temperatures to fish in! With the cool weather came some strong winds from the north as well as the east later on in the week. These strong winds pushed HR&G guides back to the banks and protected marshes to find and stay on fish. Again, this week produced some amazing temps that called for a coat in the morning, and then peeling layers back as the sun came out.  

The speckled trout have made a nice showing again this past week and have continued the upward trend as far as numbers hitting the dock is concerned. Some guides stated that they were able to pick up keeper trout under the birds along with many fish that just missed the cut to hit the icebox. Redfish have dipped in numbers, but trips have still managed to land some nice, oversized reds that are great to fight back to the boat. Flounder season is officially closed and will reopen December 1st, but that doesn’t mean you can’t still have fun catching and releasing them.  

The Speckled trout have been more susceptible to biting artificial baits this past week, with the number one baits being a Downsouth Lure rigged up on a jig head, or a Marker 54 Glide shrimp rigged under a popping cork. As always, every type of fish loves a live shrimp either under a popping cork or rigged to fish the bottom.  

FISHING TIP OF THE WEEK

Bring a jacket! If you think there is even a chance that you might get cold while out on the water, bring it. Whether it’s for fishing the whole day, or just the boat ride out to the spot first thing in the morning, it is always better to have it and not need it, than to need it and not have it!

The 2024-2025 Duck season dates have been set in stone! They are as follows-
 

Youth Only- Nov. 2-3
1st Split – Nov. 9 – Dec. 8
2nd Split – Dec. 21 – Jan. 5
3rd Split – Jan. 18 – 31

The dates are officially set, so get with your hunting partners and start checking those calendars! Call Tanya at (888) 762-3391 and get your name on a blind for this year’s duck season! This Week’s Yummy Recipe

 

 

LEMON MERINGUE PIE 

Prep time 

20 mins 

Cook time 

40 mins 

Total time 

1 hour 

  

Recipe by: George Graham 

Serves: 6 to 8 

Ingredients 

3 large eggs 

1 tablespoon lemon zest 

1 (14-ounce) can of sweetened condensed milk 

½ cup freshly squeezed lemon juice 

1 (9-inch) pre-baked pie shell, such as Pillsbury 

½ teaspoon cream of tartar 

¼ cup of sugar 

Instructions 

  1. Preheat your oven to 325ºF. 
  1. With two bowls, crack the eggs and separate the yolks from the whites. Reserve the whites for later. 
  1. Whisk the yolks with the lemon zest, condensed milk, and lemon juice. Pour into the pie shell and bake on the center rack until the filling is set, about 30 minutes. 
  1. For the meringue, beat the reserved egg whites in a mixer and add the cream of tartar. Continue beating and slowly add the sugar until stiff peaks form. 
  1. Remove the pie from the oven and while it is still hot, spread the meringue over the top and to the edges. Return to the oven and bake until the top is slightly browned, about 10 minutes. 
  1. Refrigerate before serving. 

Notes 

Make sure the egg whites are clear and free of any shells or even a speck of yolk. To prevent a weeping (watery) meringue, add the meringue while the pie is still hot, and be sure to beat the sugar until it dissolves. Any leftover pie should be refrigerated and eaten within a couple of days to prevent the meringue from becoming runny and separating.
