WORD ON THE DOCK

We’ve closed out another successful week over here at HR&G! We’d like to give a huge thank you to North Houston Pole Line for allowing us to continue the tradition of hosting their annual company fishing trip/tournament! As always, it was a great weekend of camaraderie, competition, and undoubtably there were a few laughs that were had! 

Over the past week, sports and guides were able to adapt and overcome several weather/condition changes that presented themselves and manage some great mixed boxes that ended up either under the knife or on the scales for leaderboard status. Many boats targeted both speckled trout as well as redfish this week, with both having their own moments in the spotlight. When the winds laid down, messes of trout ended up under the knife, while stronger winded days encouraged anglers to find protected waters after high tide to chase slot redfish in the marsh and on protected embankments. Top waters like the Mansfield Knocker were the top performers with artificial baits for speckled trout this week, producing both quality and quantity. Redfish’s copper-bronze coloration changes depending on habitat. Fish living over grass flats are often lighter and more golden, while marsh fish in darker water can appear deep copper or even reddish-brown.

A GENERATIONAL BLUEPRINT 

The excerpt in this photo, written by Bill Shearman of Lake Charles, is more than a tribute to Terry Shaughnessy’s legacy. It’s a reminder of what leadership actually looks like. Terry saw what gill nets were doing to our fishery long before most people were willing to admit it. He understood that if something didn’t change, future generations wouldn’t have the same opportunities he did. This didn’t just happen in the 80s and 90s — it’s happening again right now. Back then it was gill nets in our estuaries. Today it’s pressure from industrial menhaden operations in our shallow coastal waters. Different gear, same argument, same risk. 

Terry didn’t just recognize the problem — he did something about it. And that’s the part that matters. If Terry’s story teaches us anything, it’s that change doesn’t happen by accident — it happens when people get involved.

This Week’s Yummy Recipe

 

FILLET OF FLOUNDER WITH CRABMEAT DRESSING

Delicate Gulf flounder topped with a rich Louisiana crabmeat dressing and finished with a light saffron velouté. This elegant seafood entrée highlights the sweet flavor of fresh flounder while showcasing one of South Louisiana’s finest ingredients—lump blue crab. It’s a perfect dish for entertaining or for celebrating a successful day on the water.  

Recipe by: George Graham – Acadiana Table  

Serves: 4 

Ingredients 

Velouté Sauce 

  • Light chicken stock  
  • Saffron threads  
  • Butter  
  • All-purpose flour  
  • Fresh lemon juice  
  • White pepper  

Crabmeat Dressing 

  • Butter  
  • Extra-virgin olive oil  
  • Yellow onion  
  • Green bell pepper  
  • Celery  
  • Fresh parsley  
  • Fresh rosemary  
  • Garlic  
  • Lemon juice  
  • Dry white wine  
  • Cajun seasoning  
  • Louisiana lump crabmeat  
  • Unseasoned breadcrumbs  

Flounder 

  • 4 Gulf flounder fillets (about 8 ounces each)  
  • Cajun seasoning  
  • Butter  
  • Olive oil  
  • Lemon slices  
  • Fresh parsley for garnish  

Instructions 

  1. Prepare the saffron velouté by infusing saffron in warm stock, then whisking it into a light butter-and-flour roux until smooth and silky. Finish with fresh lemon juice and white pepper. Keep warm.  
  2. Build the crabmeat dressing by sautéing the onion, celery, and bell pepper in butter and olive oil. Add parsley, rosemary, garlic, lemon juice, and white wine, then gently fold in the lump crabmeat and enough breadcrumbs to create a light, moist stuffing.  
  3. Season the flounder fillets with Cajun seasoning and lightly sear them in butter and olive oil until just beginning to color.  
  4. Transfer the fillets to a baking dish, top each with a generous mound of crabmeat dressing, and bake until the fish flakes easily and the topping is lightly browned.  
  5. Spoon the warm saffron velouté onto each plate, place the flounder on top, and garnish with a lemon slice and fresh parsley before serving.  

Chef’s Notes 

  • Fresh Louisiana lump crabmeat is the star of the dressing—handle it gently to keep the large pieces intact.  
  • Gulf flounder cooks quickly, so avoid overbaking to keep the fish moist and flaky.  
  • This dish pairs beautifully with roasted asparagus, rice pilaf, or buttered new potatoes.  
  • A crisp white wine or sparkling lemonade makes an excellent accompaniment.
