GREAT WEEK TO BE IN THE FISHING AND DUCK HUNTING BUSINESS
Last week the ducks were flying………….well they were until our guides called them to the decoys and our hunters brought them down. Redfish on the south end around the weirs were huddled up waiting for an offering of just about anything you wanted to throw. It didn’t take long to get your limit of 20 to 25 inch fish that we call Calcasieu gold. All of our fishing came after a morning duck hunt in our privately managed marsh. Captain Kirk described opening week of our season as an 8 ½ as we harvested over 1250 ducks in the first 7 days. Gadwall and fast flying Teal accounted for about a third of our ducks but our guys also brought down over 70 of the fully plumed Canvasback drakes for mounting.

Many of you have asked how to cook all of the Redfish that we have been he catching here at the lodge, along with delicious redfish fillets the very meaty Redfish throats are very tasty. I like to grill them with a cold beverage but they can be prepared in a number of ways. Pan fried, oven baked, or sautéed. Use your imagination when it comes to your favorite spices.

Ingredients

Directions
Using heavy duty aluminum foil form a little shallow pan for the grill. Coat with spray Pan so the throats won’t stick. Over a medium hot grill place the throats in the foil boat and cooked covered until done. About 10 or 15 minutes. Make a sopping sauce of melted butter, salt, pepper, minced garlic, lemon juice and anything else you like. Sop the sauce over the throats a couple of times during the cooking process, Serve Hot of the grill. Enjoy
