After what seemed to just fly (Pun) by the first split of this year’s duck season came to an end very successfully for our hunters (not so good for the ducks). Our hunters brought down over 4300 of the fast flyers for the picking house. The 12 day break gives a much welcomed rest for the hunters and the ducks. Many of you have asked what our guides and employees do during their off time here at the lodge. Most of them GO HUNTING. Can you believe that? Some go deer hunting, some go hog hunting and some go fishing if the weather permits. Some of us had the opportunity during the down time to invade Lubbock Texas and spend a few days hunting sand hill cranes and Canada geese. We had a great hunt bringing down limits all three days. In fact the cranes were flying so slow that even yours truly smacked one or two every day. Don’t worry we left some seed birds for next year.. I can’t wait.

In large pot, cook the pork sausage with onion and garlic until browned.
Stir in green bell pepper and celery; cook and stir for 3 minutes longer.
Add all remaining ingredients and bring to a boil.
Cover, reduce heat to low, then cook, stirring occasionally, until rice is tender, about 40-50 minutes.
