LOTS OF REDFISH AND SMALL TROUT EVERY DAY

Captain Kirk Stansel reports that we are catching lots of oversize and slot redfish on live shrimp and soft plastics. Most all the trout are on the small side.  Many of the local shrimpers report that the marsh is full of shrimp and will be moving out into the lake during the first good cold front. Those exiting shrimp will trigger big flocks of seagulls feeding and pointing the way to easy catches of speckled trout. Get ready for a lot of fun.

2021 TEAL SEASON ENDED A STRONG 3

This year’s Teal season ended yesterday as a solid 3. Opening weekend was good with limits at most of our blinds and then Hurricane Nicholes came thru and most of our teal disappeared. That’s the bad news – – – The good news is that we have been seeing a lot of big ducks in the marsh right now so we are expecting a super 2021/2020 season so stay tuned and call 888.762.3391 and check availability.

CAJUN FRIED CHICKEN BURGERS

Ingredients

  • 1 egg white
  • 1 small clove garlic or 1 teaspoon ground garlic
  • 1 teaspoon buttermilk or 1 teaspoon 2% milk
  • 1 teaspoon, each; salt, pepper and onion powder
  • 1 tablespoon Tony Chachere’s Seasoning
  • 1-1/4 pound ground chicken, white, dark or mixed
  • 1/2 cups bread crumbs
  • 1 cup oil

Instructions

Preheat oven to 300F. Combine egg whites, garlic, milk in bowl. In another bowl, combine chicken, salt, pepper, Tony’s and 1/2 cup bread crumbs. Lightly mix those together, then add egg and milk combo. Continue to lightly mix until ball is formed. Next, form patties out of mixture to make 4-8 burgers. Roll or coat these in 1 cup of the bread crumbs. Place in refrigerator for 30 minutes. Place 1 cup of oil in skillet and heat to hot. Place burgers in skillet for 1-1/2 minutes, 45 seconds on each side. Next place those burgers on cookie tray. Place in 300 degree F oven for 13-14 minutes.
