EARLY TEAL SEASON CLOSED YESTERDAY

What many over here are claiming to be the best Teal season in many years came to an end yesterday.  Captain Guy Stansel reports that huge hatches of blue wing teal was the reason for such a great season this year. Our marsh is in great shape in terms of food which points to this year’s big duck season beginning in November should be great. SEPTEMBER  FISHING REMAINS GREAT

In addition to lots of big bull redfish the slot redfish are showing up in several places. Good catches of solid speckled trout are found over most of the oyster reefs in the lake and west cove. Check out these pictures from last week

LOUISIANA WILDLIFE & FISHERIES CLOSE FLOUNDER FISHING STATE WIDE

An annual closed season for the recreational and commercial harvest of Southern Flounder from October 15 through November 30 of each year has been finalized. This statewide closure for Southern Flounder is for all sectors and all gear types, including any flounder caught as bycatch in any other fishery.

CAJUN SAUSAGE & EGGPLANT CASSEROLE

Ingredients

  • 1 lb. fresh Italian sausage skinned and cut
  • 2 cans whole tomatoes, drained and chopped (1 Rotel & 1 regular)
  • 1 peeled eggplant, chopped
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 3 or 4 medium zucchini, sliced in rings

Directions

Brown sausage in large frying pan. Add the following: eggplant, onions, bell peppers, tomatoes, zucchini. Smother down, then transfer to a greased casserole dish. Sprinkle a lot of Parmesan cheese on top. Bake at 350F for 30 minutes. Salt and pepper to taste.

*You could also use shrimp or crawfish. It is great either way.
