Another great week at HR&G is in the books as we get July kicked off! We hope everyone had a wonderful 4th of July weekend and got to enjoy the outdoors! 

The Hackberry Rod and Gun crew spent the long holiday weekend hanging out with family and friends in celebration of the 4th! But before that, we did have boats head out to the lake earlier in the week and chase a bite. Our crews were able to put together some nice mixed boxes of fish! The trout have held consistent in providing some good bites throughout the day. The slot redfish also decided to join the party and were ready to eat. Of course, live bait can always do the trick, but the artificial bit has also been good. Early morning topwater bites on a Skitter walk have had a small window of opportunity but can produce some nice fish early in the day. After that, a Downsouth lure rigged on a jig head has been the ticket for plastics.  

FISHING FACT

As flatfish, southern flounder undergo an unusual transformation as juveniles, with both eyes migrating to one side of the body. They rely on their strong ability to blend into the seafloor to avoid predators.

This Week’s Yummy Recipe

 

CAJUN SHRIMP AND GRITS

Prep time: 15 mins 
Cook time: 20 mins 
Total time: 35 mins 
Serves: 4 

Ingredients: 

For the Shrimp: 

  • 1 pound large shrimp, peeled and deveined 
  • 1 tablespoon Cajun seasoning 
  • 1 tablespoon olive oil 
  • 1 tablespoon butter 
  • 2 cloves garlic, minced 
  • 1/2 cup chicken broth 
  • 1 tablespoon lemon juice 
  • Salt and pepper to taste 
  • For the Grits: 
  • 1 cup stone-ground grits 
  • 4 cups water (or chicken broth for added flavor) 
  • 1 tablespoon butter 
  • 1/2 cup heavy cream 
  • 1/2 cup shredded sharp cheddar cheese 
  • Salt and pepper to taste 

 

Instructions: 

Prepare the Grits: 

  1. Bring 4 cups of water (or chicken broth) to a boil in a medium saucepan. 
  2. Stir in the grits, reduce the heat to low, and cover. Cook, stirring occasionally, for 20-25 minutes, until the grits are tender. 
  3. Stir in butter, heavy cream, and shredded cheddar cheese. Season with salt and pepper to taste. Keep warm. 

Cook the Shrimp: 

  1. In a large skillet, heat the olive oil and butter over medium-high heat. 
  2. Add the shrimp and cook for 2-3 minutes per side until they turn pink and opaque. 
  3. Remove the shrimp and set aside. In the same skillet, add the garlic and cook for about 30 seconds until fragrant. 
  4. Pour in the chicken broth and lemon juice, scraping up any bits from the bottom of the skillet. Let it simmer for 2-3 minutes. 

Serve: 

  1. Spoon the grits onto plates, and top with the Cajun shrimp. 
  2. Drizzle with the sauce from the skillet, and serve immediately.
