FRESH AND MUDDY WATER IN BIG LAKE STILL CONTINUES TO DOMINATE FISHING
Most all of last week fresh and muddy water continued to hamper the catching in most of the big lake estuary. A good number of our fishermen trying to hide from strong wind headed to black lake looking for fish. Captain Darrell Guidry reported catches back in Black Lake of some trout on the small but legal size on live shrimp under a cork. Guide Captain Avery Cherry and his crew smacked a limit of 20 redfish in the 18 to 22 inch range back in the marsh on the south end. On Saturday the wind laid down and Captains Zach Mitchell and David Darnsteadt found limits of speckled trout under picking seagulls. A few catches of smaller redfish have been taken up north in the Moss Lake area.

Melt butter in heavy sauce pan and saute onions, parsley, crawfish and andouille until golden brown. Stir In flour. Add cream, red pepper and salt. Cook over medium. low heat, stirring constantly until thickened. Serve over fettuccine.
