SPECKLED TROUT CATCHING GETS BETTER EVERYDAY

Good catches of speckled trout continue to make their way back to the cleaning table every day from the lake, west cove and the marsh. With very little wind we are beginning to see much more green water on the south end as the fresh water makes it way out of our life. Live shrimp under a popping cork has been a killer bait fishing over oyster reefs in west come and near the old jetties. Captain Zach Mitchell reported that soft plastics rigged on a light lead head would work just as good if you run out of shrimp. Redfish and a few flounder are being found back in the marsh. Cajun Brownies

Cajun Crawfish and Andouille Fettuccine
1 stick butter (1/4 lb)
1 small bunch green onions, chopped
1/2 cup parsley, finely chopped
1 pound crawfish tails and fat
1/3 pound andouille, finely chopped
4 tablespoons flour
2 pints breakfast cream
Red pepper to taste
Salt to taste
1 pound Fettuccine

Melt butter in heavy sauce pan and saute onions, parsley, crawfish and andouille until golden brown. Stir In flour. Add cream, red pepper and salt. Cook over medium. low heat, stirring constantly until thickened. Serve over fettuccine.
