REDFISH STILL THE MAJOR PLAYER A couple of bad weather days kept us in last week but overall, the redfish were good. We have 12 more days of fishing this year before we open the 2022/2023 duck season.

Preheat oven to 350F. Line cookie sheet with waxed paper and grease paper well. Mix ingredients, blend until smooth. Pour onto greased wax paper and bake in 350F oven for 15 minutes. Remove from oven and sprinkle with small amount of powdered sugar. Flip over onto towel and roll up like a jelly roll. Leave in towel until completely Cool.
Combine and beat the filling ingredients until smooth. Unroll carefully and spread filling and roll back up. Refrigerate until serving. Slice it 1/2 inch thick.
