HURRICANE DELTA REPORT Hurricane Delta breezed through here Friday night with some 120 MPH winds that re-distributed some left-over Laura debris around the yard. We had some damage to rooms 11 and 12 as well as the office and dock shop. But never fear some of our misplaced guides pretending to be carpenters jumped on it yesterday and we will be back on the water Thursday
SPEAKING OF FISHING Catching Trout, Redfish and flounder was very good prior to Delta and we are looking to get back out there on Thursday with our customers. The diving sea gulls pointed the way to easy pickings for trout out on the lake. Lots of Redfish were roaming back in the marshes on the south end of the lake around Oyster Bayou. I don’t know anyone who fished the jetties, but the conditions were very good last week.

Sauté green pepper, onion, celery, and jalapeno pepper in 2-3 tbs vegetable oil until tender. Add cheese soup and stir to the above. Add chopped shrimp, liquid crab boil and garlic powder. Cook until shrimp are done, 10-12 minutes on low heat, stir fairly often or cheese will burn. A butter / flour roux will be needed to thicken enough to stay on a cracker when dipped. Can be served hot or cold and even makes a good sandwich.
