IN MEMORY OF
Hackberry Rod & Gun Founder Terry Shaugnessy passed away peacefully at his home in Chokoloskee Florida surrounded by family and friends. Terry succumbed to his long battle with cancer around 3:00 am, yesterday. A master marketer, Terry founded Hackberry Rod & Gun in 1975 in the small town of Hackberry Louisiana just south of Lake Charles. Terry should be credited with the beginning of the guide industry as we know it today on Lake Calcasieu. Rest in peace my friend.

While on vacation I had the opportunity to eat some Halibut cheeks. They were small round pieces of flesh in the cheek area that were about 2” around and ½ inch thick grilled and served with an excellent sauce. It remined me of Redfish throats that are very popular with our fishermen. Here is a recipe that we published a few years back for you to enjoy.
Many of you have asked how to cook all of the Redfish that we have been he catching here at the lodge, along with delicious redfish fillets the very meaty Redfish throats are very tasty. I like to grill them with a cold beverage but they can be prepared in a number of ways. Pan fried, oven baked, or sautéed. Use your imagination when it comes to your favorite spices.

Directions
Using heavy duty aluminum foil form a little shallow pan for the grill. Coat with spray Pan so the throats won’t stick. Over a medium hot grill place the throats in the foil boat and cooked covered until done. About 10 or 15 minutes. Make a sopping sauce of melted butter, salt, pepper, minced garlic, lemon juice and anything else you like. Sop the sauce over the throats a couple of times during the cooking process, Serve Hot of the grill. Enjoy
