WORD ON THE DOCK

Another week has been spent chasing fish and living life to its fullest over here at HR&G! We had several days of large groups heading out from the lodge in search for a box of fish to bring back home, and for the most part everyone did just that. As we progressed through the week, it seemed conditions went from great to ok, leading captains and crews to think on their feet, and they ended up putting together some respectable boxes when it was all said and done. Many groups targeted both trout and redfish this week, with the deciding factors being conditions and water levels. For both the trout and redfish, live shrimp has done most of the heavy lifting. There are still some quality trout bring caught working birds, which in that case you wanted a plastic tied on like a Marker 54 jerk shrimp or the shrimpletts under a cork, and even the ol’ sparkle beetle was putting the hurt on them as well. As we approach summertime fishing, conditions should become more predictable and begin to present great opportunities for some early morning top water action!  So, give us a call at (888) 762-3391 or visit Book a Trip and let’s go fishing! And remember, as always…” Ya Shoulda Been Here Yesterday!”. 

FISHING FACT

Redfish are extremely euryhaline, meaning they tolerate a huge range of salinities. In SWLA they can live in: 

  • Fresh marshes  

  • Brackish ponds  

  • Full Gulf saltwater  

That adaptability is one reason they thrive throughout the Louisiana coast.

A GENERATIONAL BLUEPRINT 

The excerpt in this photo, written by Bill Shearman of Lake Charles, is more than a tribute to Terry Shaughnessy’s legacy. It’s a reminder of what leadership actually looks like. Terry saw what gill nets were doing to our fishery long before most people were willing to admit it. He understood that if something didn’t change, future generations wouldn’t have the same opportunities he did. This didn’t just happen in the 80s and 90s — it’s happening again right now. Back then it was gill nets in our estuaries. Today it’s pressure from industrial menhaden operations in our shallow coastal waters. Different gear, same argument, same risk. 

Terry didn’t just recognize the problem — he did something about it. And that’s the part that matters. If Terry’s story teaches us anything, it’s that change doesn’t happen by accident — it happens when people get involved.

This Week’s Yummy Recipe

 

CAJUN BOUDIN BISCUIT BAKE

45 mins 

Fluffy biscuits baked with Cajun boudin, melted cheese, and a creamy egg mixture. It’s easy to make, feeds a crowd, and is perfect for breakfast, brunch, or even supper. 

Recipe by: George Graham 

Serves: 6–8 

Ingredients 

  • 1 can refrigerated biscuits (8-count)  
  • 1 pound Cajun boudin, casing removed  
  • 6 large eggs  
  • 1/2 cup milk  
  • 1 1/2 cups shredded cheddar cheese  
  • 1 teaspoon Cajun seasoning  
  • 1/2 teaspoon garlic powder  
  • 2 tablespoons chopped green onions  
  • Non-stick cooking spray  

Instructions 

  1. Preheat oven 
    Heat oven to 375°F. Spray a 9×13-inch baking dish.  
  2. Prepare the biscuits 
    Cut each biscuit into quarters and spread evenly in the baking dish.  
  3. Add the boudin 
    Crumble the boudin over the biscuits.  
  4. Mix the custard 
    In a bowl, whisk together eggs, milk, Cajun seasoning, and garlic powder.  
  5. Assemble 
    Pour the egg mixture evenly over the biscuits and boudin. Top with shredded cheddar cheese.  
  6. Bake 
    Bake for 25–30 minutes, or until the eggs are set and the top is golden brown.  
  7. Serve 
    Sprinkle with green onions and let cool for 5 minutes before slicing.
