Fluffy biscuits baked with Cajun boudin, melted cheese, and a creamy egg mixture. It’s easy to make, feeds a crowd, and is perfect for breakfast, brunch, or even supper.

Ingredients
- 1 can refrigerated biscuits (8-count)
- 1 pound Cajun boudin, casing removed
- 6 large eggs
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 2 tablespoons chopped green onions
- Non-stick cooking spray
Instructions
- Preheat oven
Heat oven to 375°F. Spray a 9×13-inch baking dish. - Prepare the biscuits
Cut each biscuit into quarters and spread evenly in the baking dish. - Add the boudin
Crumble the boudin over the biscuits. - Mix the custard
In a bowl, whisk together eggs, milk, Cajun seasoning, and garlic powder. - Assemble
Pour the egg mixture evenly over the biscuits and boudin. Top with shredded cheddar cheese. - Bake
Bake for 25–30 minutes, or until the eggs are set and the top is golden brown. - Serve
Sprinkle with green onions and let cool for 5 minutes before slicing.
