REDFISH ARE GOOD UP NORTH AND IN THE MARSHES ALONG THE CHANNEL
We had lots of rain and weather last week that influenced both our fishing and Teal hunting. We have been catching slot redfish and some solid trout that have been coming from up north of the Intercostal Water way around the Moss Lake and the Haymark area. A few flounder are being caught in the cuts in West cove on soft plastics on an outgoing tide. Glow with a chartreuse tail Hackberry Hustler rigged on a light lead head, dragging it on the bottom has been the best. We got a lot of rain from the system that devastated east Texas but has not affected Big Lake as of this writing. As it is this time of the year live bait remains the best bait by far.

EARLY TEAL SEASON STARTED SLOW AND WENT DOWN HILL FROM THERE
Teal are funny little ducks. One day you are covered up and the next day in the same blind what do you think? That’s right nothing but shore birds. *Seriously though* some of our blinds have been very productive bringing down limits almost every day and others are slow. We could use a little cold front to come on down.

EARLY TEAL IN LOUISIANA
Lone Star Outdoor News’ David J. Sams traveled to Hackberry, Louisiana for a strategy meeting with Ducks Unlimited to discuss their upcoming expo in May. As tropical depression Imelda hit Southeast Texas hard, the group also experienced the wrath of the storm. They still managed to shoot a few teal and caught a mess of fish. As usual, the teal are there one day and gone the next, with mixed reports coming in. Sams shot two teal in one shot, the most action to happen during the hunt. If you have anything to do with the outdoors, you will want to be involved in DUX, the three-day Ducks Unlimited Expo, to be held at the Texas Motor Speedway from May 15-17. Many years ago when I first came to HR&G Martha Shaughnessy told me that she cooked her fish from time to time in the microwave. I said “NO WAY” she then proceeded to show me how she did it and some 40 years later we still cook some of our fish in the microwave. It is so quick and (can be healthy) – but the best part is you can add anything you want to make it GOOD. Here is the basic recipe the way Martha did it.
Ingredients
Cleaned Fish (trout or redfish) filets
McCormick lemon pepper
A couple of pats of butter
Instructions
Sprinkle lemon pepper generously on filets. Dot with butter. Place filets in covered microwave safe dish and cook for two (2) minutes per filet. Let cool for a couple of minutes and eat em’ with your favorite crackers or French bread.
Now for the fun part – – – sometime during the cooking process I like to stop and add stuff like cheddar cheese, picante sauce on top and pop it back in to until the cheese melts. Actually you can add anything you want to the top and enjoy it. This fish dish can be quick and healthy if you like, but the best thing is to enjoy it.
