CATCHING REDFISH DON’T GET NO BETTER

Due to the high winds and large tidal movements, Redfish have continued to dominate the fishing scene this past week on Lake Calcasieu. From the north end of the estuary to the lower south end of the lake, slot redfish were the name of the game. Take a look at the attached pictures – they are impressive.

Fair numbers of solid trout are being caught on top water baits early in the morning on mirrolure’s top dog, and Heddon’s Super Spook both in the bone color as well as shrimp under a popping cork.

Due to some freshwater runoff, live shrimp haven’t been as plentiful at the bait houses.

This Week’s Yummy Recipe

SWEET POTATO CRUNCH

Ingredients

6 cups cooked sweet potatoes
2 cups sugar
1 teaspoon salt
4 eggs, beaten
1 stick margarine, melted (1/4 lb)
1 cup milk
1 teaspoon vanilla

Mash potatoes (no juice). Combine all ingredients.

Topping:

2 cups brown sugar
2/3 cup flour
2 cups chopped pecans
2/3 cup margarine, melted

Directions

Combine all the topping ingredients. Pour over sweet potato mixture. Bake at 350F for 35 minutes.
