The freeze of 2021 is history, and we feel that we dodge a big bullet in terms of fish loss. We have not seen and have not heard any reports of significant fish loss in our area.
REDFISH & FLOUNDER SHOWING THEIR GRIT
Most fishermen on the lake are bringing in limits of redfish that are being caught on live bait offering on the bottom. Guide Brian Winsor who has been spending his time on the water wading and fishing the weirs reports redfish are there for the taking. The good news is he also snapped up a limit of trout in west cove the same day.

A couple of years ago our friend Bob McNally penned an article on catching redfish in cold weather along the Gulf Coast. You might enjoy what he has to say. Even though it has been a couple of years old the tackle and procedures remain the same.
Many of you have asked how to cook all of the Redfish that we have been he catching here at the lodge, along with delicious redfish fillets the very meaty Redfish throats are very tasty. I like to grill them with a cold beverage but they can be prepared in a number of ways. Pan fried, oven baked, or sautéed. Use your imagination when it comes to your favorite spices.

Here is the way I like them. Check it out
Using heavy duty aluminum foil form a little shallow pan for the grill. Coat with spray Pan so the throats won’t stick. Over a medium hot grill place the throats in the foil boat and cooked covered until done. About 10 or 15 minutes. Make a sopping sauce of melted butter, salt, pepper, minced garlic, lemon juice and anything else you like. Sop the sauce over the throats a couple of times during the cooking process, Serve Hot of the grill. Enjoy
