Turtle Sauce Picante


  • 4 lb. select turtle
  • 2 tbsp. light roux
  • 2 cans tomato sauce
  • 1 lg. onion, chopped
  • 1 med. bell pepper, chopped
  • 3 cloves garlic, chopped


Cook light roux and tomato sauce for 20 minutes. Add onion, bell pepper and garlic. Cook for 15 minutes more. Brown turtle on the side in a black iron pot in oil until nicely browned. Add to sauce, bring to boil, lower fire, cover and simmer about 2 hours. Serve over rice and enjoy. Salt and pepper to taste.
