A flavorful Cajun staple, Dirty Rice is packed with spices, herbs, and savory bits of meat. It’s a versatile side dish that pairs perfectly with any Southwest Louisiana meal.

Ingredients
- 1 cup long-grain white rice
- 2 cups chicken stock
- 1 tablespoon olive oil
- 1/2 pound ground pork
- 1/2 pound ground beef
- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced green bell pepper
- 2 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 green onions, chopped
- Salt and black pepper, to taste
Instructions
- Rinse rice under cold water and set aside. In a medium pot, bring chicken stock to a boil. Add rice, reduce heat to low, cover, and cook for 18–20 minutes, until rice is tender and liquid is absorbed. Fluff with a fork and set aside.
- In a large skillet over medium heat, add olive oil. Cook ground pork and beef until browned, breaking it into small pieces. Drain excess fat if needed.
- Add onion, celery, bell pepper, and garlic to the skillet. Sauté until vegetables are soft, about 5 minutes.
- Stir in Cajun seasoning, thyme, and paprika. Cook for another 2 minutes until fragrant.
- Add cooked rice to the skillet, mixing thoroughly to combine with the meat and vegetable mixture. Cook for another 5 minutes, stirring occasionally, to let flavors meld.
- Taste and adjust seasoning with salt and black pepper. Garnish with chopped green onions before serving.
Notes
- For extra authenticity, you can add a small amount of chopped liver or gizzards (optional).
- This dish keeps well and can be made ahead; flavors actually deepen after sitting for a few hours.
- Perfect side for Cajun blackened fish, shrimp, or grilled meats.
