Recipe by: George Graham
Serves: 4
Ingredients
- 1/4 cup unsalted butter
- 1/2 cup brown sugar, packed
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 4 ripe bananas, peeled and sliced lengthwise
- 1/4 cup dark rum
- 1 teaspoon vanilla extract
- Vanilla ice cream, for serving
Instructions
- In a large skillet over medium heat, melt butter. Stir in brown sugar, cinnamon, and nutmeg until combined and bubbling.
- Add the banana slices and cook for 2–3 minutes on each side until caramelized.
- Remove the skillet from heat and carefully add rum. Return to low heat and ignite the rum with a long match to flambé (optional). Allow alcohol to burn off, about 30 seconds.
- Remove from heat and stir in vanilla extract.
- Serve immediately over scoops of vanilla ice cream.
Notes
- Use firm bananas to prevent them from falling apart during cooking.
- Be careful with the flambé step — always tilt the pan away from yourself and have a fire extinguisher nearby.
- Can be made ahead (skip flambé) and reheated gently in a skillet.
