BEIGNETS À LA CAJUN

A classic New Orleans-style fried dough, light, fluffy, and dusted with powdered sugar — perfect for a sweet finish to any Cajun meal. 

Ingredients: 

  • 2 1/4 teaspoons active dry yeast (1 packet) 
  • 1 1/2 cups warm water (110°F) 
  • 1/2 cup granulated sugar 
  • 1 teaspoon salt 
  • 2 large eggs 
  • 1/2 cup evaporated milk 
  • 7 cups all-purpose flour 
  • 1/4 cup unsalted butter, softened 
  • Vegetable oil, for frying 
  • Powdered sugar, for dusting 

 

Instructions: 

Prepare the Dough: 

  1. In a large bowl, dissolve the yeast in warm water with a pinch of sugar. Let sit 5-10 minutes until foamy. 
  2. Add sugar, salt, eggs, evaporated milk, and butter. Mix to combine. Gradually add flour until a soft dough forms. 

Knead and Rise: 

  1. Turn the dough onto a floured surface and knead for 5-7 minutes until smooth. 
  2. Place in a greased bowl, cover with a towel, and let rise in a warm place until doubled in size, about 1 hour. 

Shape the Beignets: 

  1. Roll the dough to 1/4-inch thickness. Cut into 2-3 inch squares or rectangles. 
  2. Heat oil in a deep fryer or heavy skillet to 360°F. 

Fry: 

  1. Fry the dough in batches until golden brown, 2-3 minutes per side. Drain on paper towels. 

Serve: 

  1. Dust generously with powdered sugar while warm. Serve with coffee or a chicory latte for a true Louisiana experience.
