A classic New Orleans-style fried dough, light, fluffy, and dusted with powdered sugar — perfect for a sweet finish to any Cajun meal.
Ingredients:
- 2 1/4 teaspoons active dry yeast (1 packet)
- 1 1/2 cups warm water (110°F)
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup evaporated milk
- 7 cups all-purpose flour
- 1/4 cup unsalted butter, softened
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions:
Prepare the Dough:
- In a large bowl, dissolve the yeast in warm water with a pinch of sugar. Let sit 5-10 minutes until foamy.
- Add sugar, salt, eggs, evaporated milk, and butter. Mix to combine. Gradually add flour until a soft dough forms.
Knead and Rise:
- Turn the dough onto a floured surface and knead for 5-7 minutes until smooth.
- Place in a greased bowl, cover with a towel, and let rise in a warm place until doubled in size, about 1 hour.
Shape the Beignets:
- Roll the dough to 1/4-inch thickness. Cut into 2-3 inch squares or rectangles.
- Heat oil in a deep fryer or heavy skillet to 360°F.
Fry:
- Fry the dough in batches until golden brown, 2-3 minutes per side. Drain on paper towels.
Serve:
- Dust generously with powdered sugar while warm. Serve with coffee or a chicory latte for a true Louisiana experience.
