A decadent dessert from New Orleans, Bananas Foster is caramelized bananas in a buttery, brown sugar sauce, often flambéed with rum and served over vanilla ice cream. Perfect for impressing at home!

Recipe by: George Graham
Serves: 4

Ingredients

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 4 ripe bananas, peeled and sliced lengthwise
  • 1/4 cup dark rum
  • 1 teaspoon vanilla extract
  • Vanilla ice cream, for serving

Instructions

  1. In a large skillet over medium heat, melt butter. Stir in brown sugar, cinnamon, and nutmeg until combined and bubbling.
  2. Add the banana slices and cook for 2–3 minutes on each side until caramelized.
  3. Remove the skillet from heat and carefully add rum. Return to low heat and ignite the rum with a long match to flambé (optional). Allow alcohol to burn off, about 30 seconds.
  4. Remove from heat and stir in vanilla extract.
  5. Serve immediately over scoops of vanilla ice cream.

Notes

  • Use firm bananas to prevent them from falling apart during cooking.
  • Be careful with the flambé step — always tilt the pan away from yourself and have a fire extinguisher nearby.
  • Can be made ahead (skip flambé) and reheated gently in a skillet.
