A flavorful Cajun staple, Dirty Rice is packed with spices, herbs, and savory bits of meat. It’s a versatile side dish that pairs perfectly with any Southwest Louisiana meal. 

 
Serves: 6 

Ingredients 

  • 1 cup long-grain white rice 
  • 2 cups chicken stock 
  • 1 tablespoon olive oil 
  • 1/2 pound ground pork 
  • 1/2 pound ground beef 
  • 1 cup diced onion 
  • 1/2 cup diced celery 
  • 1/2 cup diced green bell pepper 
  • 2 cloves garlic, minced 
  • 2 teaspoons Cajun seasoning 
  • 1 teaspoon dried thyme 
  • 1 teaspoon paprika 
  • 2 green onions, chopped 
  • Salt and black pepper, to taste 

Instructions 

  1. Rinse rice under cold water and set aside. In a medium pot, bring chicken stock to a boil. Add rice, reduce heat to low, cover, and cook for 18–20 minutes, until rice is tender and liquid is absorbed. Fluff with a fork and set aside. 
  1. In a large skillet over medium heat, add olive oil. Cook ground pork and beef until browned, breaking it into small pieces. Drain excess fat if needed. 
  1. Add onion, celery, bell pepper, and garlic to the skillet. Sauté until vegetables are soft, about 5 minutes. 
  1. Stir in Cajun seasoning, thyme, and paprika. Cook for another 2 minutes until fragrant. 
  1. Add cooked rice to the skillet, mixing thoroughly to combine with the meat and vegetable mixture. Cook for another 5 minutes, stirring occasionally, to let flavors meld. 
  1. Taste and adjust seasoning with salt and black pepper. Garnish with chopped green onions before serving. 

Notes 

  • For extra authenticity, you can add a small amount of chopped liver or gizzards (optional). 
  • This dish keeps well and can be made ahead; flavors actually deepen after sitting for a few hours. 
  • Perfect side for Cajun blackened fish, shrimp, or grilled meats.
