CAJUN PRALINES

Ingredients:
- 1 cup unsalted butter
 - 1 cup brown sugar
 - 1 cup granulated sugar
 - 1/2 cup heavy cream
 - 1 teaspoon vanilla extract
 - 1/2 teaspoon salt
 - 2 cups pecan halves (or pieces)
 - 1/2 teaspoon cinnamon (optional)
 
Instructions:
Prepare the Mixture:
- In a medium saucepan, melt the butter over medium heat.
 - Stir in the brown sugar, granulated sugar, and heavy cream. Bring to a boil while stirring constantly.
 - Once boiling, allow the mixture to cook for 5 minutes without stirring. The mixture should thicken slightly.
 - Add Pecans and Flavor:
 - Remove the saucepan from the heat. Stir in the vanilla extract, salt, and cinnamon (if using).
 - Add the pecans to the mixture and stir until they are fully coated in the syrup.
 
Form the Pralines:
- Working quickly, drop spoonfuls of the mixture onto a piece of parchment paper or a non-stick baking mat.
 - Flatten them slightly with the back of the spoon to form even-sized pralines.
 - Allow the pralines to cool and harden, which should take about 10 minutes.
 
Serve:
Once set, enjoy the sweet and nutty pralines! Store them in an airtight container for up to a week.
