CAJUN PRALINES

Ingredients: 

  • 1 cup unsalted butter 
  • 1 cup brown sugar 
  • 1 cup granulated sugar 
  • 1/2 cup heavy cream 
  • 1 teaspoon vanilla extract 
  • 1/2 teaspoon salt 
  • 2 cups pecan halves (or pieces) 
  • 1/2 teaspoon cinnamon (optional) 

Instructions: 

Prepare the Mixture: 

  1. In a medium saucepan, melt the butter over medium heat. 
  2. Stir in the brown sugar, granulated sugar, and heavy cream. Bring to a boil while stirring constantly. 
  3. Once boiling, allow the mixture to cook for 5 minutes without stirring. The mixture should thicken slightly. 
  4. Add Pecans and Flavor: 
  5. Remove the saucepan from the heat. Stir in the vanilla extract, salt, and cinnamon (if using). 
  6. Add the pecans to the mixture and stir until they are fully coated in the syrup. 

Form the Pralines: 

  1. Working quickly, drop spoonfuls of the mixture onto a piece of parchment paper or a non-stick baking mat. 
  2. Flatten them slightly with the back of the spoon to form even-sized pralines. 
  3. Allow the pralines to cool and harden, which should take about 10 minutes. 

Serve: 

Once set, enjoy the sweet and nutty pralines! Store them in an airtight container for up to a week.
