CAJUN REDFISH FISHBALLS
Ingredients
• 2 lb boiled Redfish filet
• 4 med boiled potatoes
• 1 med onion
• 2 tsp parsley
• 1-1/2 tsp season salt
• 1/4 cup onion tops
• 1/4 cup bread crumbs
Directions
Sauté seasoning, onions, onion tops and fish for 5 minutes on medium fire. Add potatoes and breadcrumbs to the above mixture with fire off. Let cool. Roll mixture into small balls. Then roll in breadcrumbs. Fry until golden brown.
