After 24 years of penning this Monday Morning (sometimes Tuesday) rag we are hanging ’em up. It’s been an honor for us, and we treasure the relationships we have made during the years here at the lodge. We are excited that one of our own, Captain Connor Fontenot, will be assuming the marketing duties.  Connor’s experience in social media marketing and professional guiding completes his qualifications.

FROM THE HORSES MOUTH

Fishing this week was about a 7/10. Redfish are being caught on the north end of the lake on live bait when available, as well as soft plastics under a cork. Despite all of the rain and fresh water coming down from the north end, our guides have still managed to find a good number of redfish, founder, and a few larger trout. May and June are fantastic months to get on a great trout bite! Call us at (888) 762-3391 and ask for Tanya to get hooked up with a trip!

This Week’s Yummy Recipe

 

RICE COOKER CAJUN CRAWFISH AND RICE

Ingredients

  • 1/4 bottle of liquid crab boil
  • 3 dashes of hot sauce
  • 2-1/2 cups of rice
  • 1 lb crawfish tails w/fat
  • 2 cans of beef broth or ( 1 beef and 1 chicken broth)
  • 1 onion, chopped
  • 1/2 bell pepper, chopped
  • 1 can of chopped mushrooms without liquid
  • 1/4 lb margarine or butter
  • Season All

Directions

Add all ingredients in rice cooker, cover top with Season All, stir, cover and turn on rice cooker.

When cooked let stand 10 minutes.
