Fishing was tough this past week. South/southwest wind was the culprit, and it was blowing hard. Low tides and hot weather were running the redfish out of the marsh so catching redfish was good. Trout fishing was very tough last week but if the wind lays down it will pick up again. Most all our fish are coming from the south end around west cove and big lake. Notice of intent on new trout regulations
Louisiana wildlife and fisheries commission voted to publish a NOI to change speckled trout regulations to – min. 13 inches, 15 fish per day, 2 fish over 20 inches and do away with the guide’s limit. After this comment period (maybe 30 days) the proposal will make its way to the governor’s office for his signature but like most things that happen in Baron Rouge this proposal is a moving target so keep your fingers crossed.

This Week’s Yummy Recipe

TURKEY AND SAUSAGE GUMBO

Ingredients

Leftover turkey
1 lb. smoked sausage
1/2 cup oil
1/2 cup flour
1 cup chopped onions
1 clove garlic
Chopped onion tops and parsley

Directions

Salt and pepper to taste

Remove meat from turkey bones. Simmer bones and skin in one gallon water for about 1 hour. Make roux with oil and flour, cook until wilted. Add water from simmered turkey bones. Cut sausage in rings and brown on both sides. Add sausage and turkey meat to roux mixture. Continue cooking until meat is tender. Season to taste. Add onion tops and parsley. Add file to each plate of gumbo
