CHARGRILLED CAJUN OYSTERS

Fresh Gulf oysters grilled with butter, garlic, and Cajun spices, then topped with Parmesan and parsley. A smoky, buttery delicacy straight from the bayou!

Ingredients
- 2 dozen fresh Gulf oysters, on the half shell
- 1 stick (1/2 cup) unsalted butter, melted
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 tablespoon lemon juice
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 tablespoon hot sauce (optional)
- French bread, for serving
Instructions
- Preheat the grill:
Heat your charcoal or gas grill to medium-high. If using charcoal, let the coals get gray and ashy for a smoky flavor. - Make the butter mixture:
In a small saucepan, melt butter. Stir in garlic, Cajun seasoning, lemon juice, and black pepper. - Grill the oysters:
Place oysters (on the half shell) directly on the grill grate. Spoon about 1 tablespoon of the butter mixture over each oyster. - Cook until bubbly:
Grill for 5–7 minutes, or until the oysters are hot, bubbly, and the edges begin to curl. - Top and serve:
Sprinkle with Parmesan cheese and parsley, then drizzle with a few drops of hot sauce if desired. Serve immediately with warm French bread for dipping in the buttery juices.
Notes
- Use fresh Gulf oysters for the best flavor.
- You can also bake these under a broiler if you don’t have a grill.
- Try topping with a bit of smoked gouda or mozzarella for a richer, cheesier twist.
