CAJUN CORN MAQUE CHOUX

Ingredients 

  • 4 cups fresh corn (cut off the cob) (or frozen if needed)  
  • 4 slices bacon, chopped  
  • 1/2 cup diced onion  
  • 1/2 cup diced green bell pepper  
  • 1/2 cup diced celery  
  • 2 cloves garlic, minced  
  • 1 teaspoon Cajun seasoning  
  • 1/2 teaspoon smoked paprika  
  • 1/2 teaspoon black pepper  
  • 1/2 teaspoon salt  
  • 1/2 cup heavy cream  
  • 2 tablespoons butter  
  • 2 tablespoons chopped green onions  

 

Instructions 

  1. Cook the bacon 
    In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pan.  
  2. Build the base 
    Add onion, bell pepper, and celery to the bacon grease. Cook 5–6 minutes until softened. Add garlic and cook 1 minute.  
  3. Add the corn 
    Stir in corn, Cajun seasoning, paprika, salt, and pepper. Cook for 10 minutes, stirring occasionally.  
  4. Make it creamy 
    Pour in heavy cream and stir. Let it simmer 5–7 minutes until slightly thickened.  
  5. Finish 
    Stir in butter and cooked bacon. Mix until melted and combined.  
  6. Serve 
    Top with green onions and serve hot.
