CAJUN CORN MAQUE CHOUX

Ingredients
- 4 cups fresh corn (cut off the cob) (or frozen if needed)
- 4 slices bacon, chopped
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced celery
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons chopped green onions
Instructions
- Cook the bacon
In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving the grease in the pan. - Build the base
Add onion, bell pepper, and celery to the bacon grease. Cook 5–6 minutes until softened. Add garlic and cook 1 minute. - Add the corn
Stir in corn, Cajun seasoning, paprika, salt, and pepper. Cook for 10 minutes, stirring occasionally. - Make it creamy
Pour in heavy cream and stir. Let it simmer 5–7 minutes until slightly thickened. - Finish
Stir in butter and cooked bacon. Mix until melted and combined. - Serve
Top with green onions and serve hot.
