Dirty rice gets its name from the rich, brown color that comes from cooking rice with seasoned meat and the holy trinity. It’s bold, savory, and one of the most iconic Cajun sides there is.

Ingredients
- 2 cups cooked white rice
- 1/2 pound ground pork or ground beef
- 1/2 pound chicken livers, finely chopped (optional but traditional)
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced green bell pepper
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper (optional)
- 1/2 cup chicken stock
- 2 tablespoons chopped green onions
Instructions
- Cook the meat
In a large skillet, cook ground meat over medium heat until browned. Add chopped chicken livers and cook 3–4 minutes until fully cooked. - Add the trinity
Stir in onion, celery, and bell pepper. Cook 5–6 minutes until softened. Add garlic and cook 1 minute. - Season it up
Add Cajun seasoning, salt, black pepper, and cayenne. Stir well. - Add rice and stock
Stir in cooked rice and pour in chicken stock. Mix thoroughly and let cook 5–7 minutes so everything blends together. - Finish
Stir in green onions and remove from heat. - Serve
Serve hot alongside fish, duck, or anything coming off the grill.
