CAJUN POTATO SALAD

Ingredients 

  • 3 pounds red potatoes, peeled and cubed  
  • 3 large eggs  
  • 1 cup mayonnaise  
  • 2 tablespoons yellow mustard  
  • 1/2 cup diced onion  
  • 1/4 cup diced celery  
  • 2 tablespoons sweet pickle relish  
  • 1 teaspoon Cajun seasoning  
  • 1/2 teaspoon black pepper  
  • 1/2 teaspoon salt  
  • 1/4 teaspoon paprika  
  • 2 tablespoons chopped green onions  

Instructions 

  1. Boil the potatoes 
    Place potatoes in a pot of salted water. Bring to a boil and cook 10–15 minutes until fork-tender. Drain and let cool slightly.  
  2. Boil the eggs 
    In a separate pot, boil eggs for 10 minutes. Peel and chop once cooled.  
  3. Make the base 
    In a large bowl, combine mayonnaise, mustard, Cajun seasoning, salt, pepper, and paprika.  
  4. Mix it up 
    Add potatoes, chopped eggs, onion, celery, and relish. Gently fold everything together until well coated.  
  5. Finish 
    Sprinkle in green onions and give it one final mix.  
  6. Chill & serve 
    Refrigerate at least 1 hour before serving — it gets better as it sits.
