CAJUN SHRIMP AND GRITS

Ingredients:
For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
- For the Grits:
- 1 cup stone-ground grits
- 4 cups water (or chicken broth for added flavor)
- 1 tablespoon butter
- 1/2 cup heavy cream
- 1/2 cup shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions:
Prepare the Grits:
- Bring 4 cups of water (or chicken broth) to a boil in a medium saucepan.
- Stir in the grits, reduce the heat to low, and cover. Cook, stirring occasionally, for 20-25 minutes, until the grits are tender.
- Stir in butter, heavy cream, and shredded cheddar cheese. Season with salt and pepper to taste. Keep warm.
Cook the Shrimp:
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the shrimp and cook for 2-3 minutes per side until they turn pink and opaque.
- Remove the shrimp and set aside. In the same skillet, add the garlic and cook for about 30 seconds until fragrant.
- Pour in the chicken broth and lemon juice, scraping up any bits from the bottom of the skillet. Let it simmer for 2-3 minutes.
Serve:
- Spoon the grits onto plates, and top with the Cajun shrimp.
- Drizzle with the sauce from the skillet, and serve immediately.
