Sausage Jambalaya

Ingredients

  • 1 large onion
  • 1/2 bell pepper
  • 1 large tomato
  • 1 cup rice
  • 1/4 lb butter
  • 1 lb smoked sausage
  • 1 lb cube chicken may also be added
  • 1 can chicken broth plus additional water to make 2 cups

Instructions

Chop onion and bell pepper, saute in butter, add tomatoes and saute about 3 minutes (set aside). Dice sausage in small cubes and boil for 5 minutes. Discard water. Add all ingredients in a 2 quart casserole covered dish, bake at 350F for 30 or 35 minutes Remove cover and bake 5 minutes.
