CAJUN POTATO SALAD

Ingredients
- 3 pounds red potatoes, peeled and cubed
- 3 large eggs
- 1 cup mayonnaise
- 2 tablespoons yellow mustard
- 1/2 cup diced onion
- 1/4 cup diced celery
- 2 tablespoons sweet pickle relish
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 2 tablespoons chopped green onions
Instructions
- Boil the potatoes
Place potatoes in a pot of salted water. Bring to a boil and cook 10–15 minutes until fork-tender. Drain and let cool slightly. - Boil the eggs
In a separate pot, boil eggs for 10 minutes. Peel and chop once cooled. - Make the base
In a large bowl, combine mayonnaise, mustard, Cajun seasoning, salt, pepper, and paprika. - Mix it up
Add potatoes, chopped eggs, onion, celery, and relish. Gently fold everything together until well coated. - Finish
Sprinkle in green onions and give it one final mix. - Chill & serve
Refrigerate at least 1 hour before serving — it gets better as it sits.
