• 1 lb catfish fillets
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/2 chopped onion
  • 2 med cloves garlic, finely chopped
  • 2 tbs vegetable oil
  • 2 cups chicken broth
  • One 14-1/2 oz can whole tomatoes
  • One 10 oz pkg frozen sliced okra
  • 1/4 tsp red pepper
  • 1 tsp gumbo file (optional)


Wash catfish and cut into 1-inch pieces and set aside. Cook celery, green pepper, onion, and garlic in vegetable oil in Dutch even until tender. Add broth tomatoes, okra, and red pepper. Cover and simmer 20 minutes. Place fish on vegetables. Cover and simmer 15 minutes longer or until fish flakes easily when tested.
