WORD ON THE DOCK

It’s Starting to Feel Like Fall Fishing! 

Southwest LA has been absolutely blessed this week with some phenomenal weather! With some 60-degree temps in the mornings, we couldn’t have asked for better fishing conditions to bring September to an end. As we ease into October, we hope the weather plays nice and continues this cooling trend! 

Along with the great weather came some great fishing days out on Calcasieu Lake. The speckled trout are still in the habit of hiding, but some HR&G guides found great success chasing them throughout the week. A couple of crews have reported that they crushed them in one area, and then returned the next day to find them completely gone. But what the trout lacked; the redfish made up for. We saw many HR&G crews catch their limits of redfish this past week while also reporting several oversized reds being caught and released to fight another day.  

Artificial lures have continued to live in the shadow of live bait. Many of our redfish and trout are coming out of the marshes, which means live shrimp under a popping cork with a couple of split shots underneath is doing the trick. For deeper waterways, just loose the cork and keep the split shots and a khale hook. If you choose to fish with artificial, the Marker 54 Glide Shrimp under a cork has been known to trick a fish or two.  

Teal Season Update 

It is bittersweet bringing teal season to an end over here in SWLA. There were many ups and downs throughout the 16-day season with some days producing ample opportunity for a limit while others were slim pickings. Although it wasn’t a complete smash fest as we hoped for, it gave everyone a chance to knock the rust off and get a taste of what is to come in November for big duck season. So, for now, it is hurry up and wait, because we all know it can’t get here quick enough.  

FISHING TIP OF THE WEEK

 

Let someone know where you’re heading! If you are planning on going out on a fishing trip either alone or with a couple buddies, always make sure to let someone that isn’t going out there with you know roundabout areas in which you’ll be going. In the event of something going wrong and you have no means of communication, help will know which areas to start searching in. Nobody wants to give up their secret fishing spot, but better to be safe than sorry.

The 2024-2025 Duck season dates have been set in stone! They are as follows-
 

Youth Only- Nov. 2-3
1st Split – Nov. 9 – Dec. 8
2nd Split – Dec. 21 – Jan. 5
3rd Split – Jan. 18 – 31

The dates are officially set, so get with your hunting partners and start checking those calendars! Call Tanya at (888) 762-3391 and get your name on a blind for this year’s duck season! This Week’s Yummy Recipe

 

TEAL STUFFED WITH MUSTARD GREENS AND SWEET POTATOES

Serves: 4 

Ingredients 

  • 8 teal, cleaned 
  • 3 cups chopped mustard greens 
  • 2 cups diced sweet potato 
  • 1 cup diced yellow onion 
  • 1 cup diced celery 
  • ½ tablespoon Acadiana Table Cajun Seasoning Blend, see recipe here 
  • 1 teaspoon kosher salt 
  • 1 teaspoon black pepper 
  • 2 pieces smoked meat (ham hock, smoked sausage, or smoked turkey necks), optional 
  • 8 cups chicken stock, plus more if needed 
  • 6 cups cooked white rice, such as Supreme, for serving 
  • Hot sauce, for serving 

Instructions 

  1. Inspect the ducks and pull out any remaining pin feathers with a pair of pliers. 
  2. Combine the greens, 1 cup of the sweet potatoes, onion, and celery in a large mixing bowl, and season with Cajun seasoning, salt, and pepper. Stuff the cavities of each duck with as much of the mixture as will fit. 
  3. Place the stuffed teal in a pot (or Dutch oven) and add any remaining stuffing mixture along with the smoked meat. Add enough chicken stock to cover the teal. Place on a stovetop burner and bring to a boil. Lower the heat to a gentle boil and let cook uncovered, checking periodically to make sure there is still liquid in the pot. 
  4. Over the course of 1 to 2 hours (depending on the size of the pot and the amount of liquid), the stock will reduce, and the teal are done when most of the liquid cooks off and thickens to a gravy consistency. 
  5. At this point, finish the dish by adding the remaining 1 cup of diced sweet potatoes and 2 cups of water (or remaining stock) to the pot. Cover and bring to a simmer. Cook until the potatoes are tender and the liquid reduces down to a gravy consistency, 10 to 15 minutes. 
  6. Serve each guest a couple of teal with a double spoonful of gravy over a mound of cooked white rice. And be sure to have some ice-cold beer and a loaf of hot French bread nearby. Serve with hot sauce on the side. 

Notes 

If there’s no duck hunter in your family, find a friend who will share (my neighbor Don Bacque dropped off a sack of cleaned teal at my back door.) This recipe can be scaled up easily and the teal can be stacked in a large Dutch oven. The amount of cooking liquid (stock) will vary with the dimensions of your pot, so have plenty on hand or use added water if needed. My spice level is moderate, so add more Cajun seasoning or hot sauce if you like it spicier. The smoked meat (optional) is in this recipe to add flavor only, discard it after the long braise if you do not want to serve it (it is tasty though).
