SWEET POTATO CRUNCH

Ingredients

  • 6 cups cooked sweet potatoes
  • 2 cups sugar
  • 1 teaspoon salt
  • 4 eggs, beaten
  • 1 stick margarine, melted (1/4 lb)
  • 1 cup milk
  • 1 teaspoon vanilla

Mash potatoes (no juice). Combine all ingredients.

Topping:

  • 2 cups brown sugar
  • 2/3 cup flour
  • 2 cups chopped pecans
  • 2/3 cup margarine, melted

Directions

Combine all the topping ingredients. Pour over sweet potato mixture. Bake at 350F for 35 minutes.
