Sausage Jambalaya
Ingredients
- 1 large onion
- 1/2 bell pepper
- 1 large tomato
- 1 cup rice
- 1/4 lb butter
- 1 lb smoked sausage
- 1 lb cube chicken may also be added
- 1 can chicken broth plus additional water to make 2 cups
Instructions
Chop onion and bell pepper, saute in butter, add tomatoes and saute about 3 minutes (set aside). Dice sausage in small cubes and boil for 5 minutes. Discard water. Add all ingredients in a 2 quart casserole covered dish, bake at 350F for 30 or 35 minutes Remove cover and bake 5 minutes.
