REDFISH SANDWHICH SPREAD

I am always searching for new ways to enjoy the fish we catch and this one is incredibly easy and delicious. We often take it along to make sandwiches on the boat…all you need is some lettuce and a couple slices of bread for a quick lunch on the water. Also great as a dip served with crackers!

Ingredients

  • Two medium redfish fillets, blood line removed.
  • 2 chopped hard-boiled eggs.
  • ¼ cup of chopped dill pickles
  • ¼ cup of chopped onions
  • ½ cup of chopped celery
  • ½ cup of mayonnaise
  • 1 Tbsp Dijon mustard
  • ¼ tsp crushed red pepper
  • Salt and pepper to taste

Directions

Boil redfish until fully cooked and easily flaked, drain and crumble. Then put in a mixing bowl. Add eggs, pickles, onions, mayonnaise, mustard, red pepper, salt and pepper, and fold to combine with flaked fish. Refrigerate for a couple of hours before serving on crackers or as a sandwich.
