CAJUN CHEESY CRAWFISH MAC & CHEESE

Ingredients 

  • 12 oz elbow macaroni  
  • 2 tablespoons butter  
  • 2 tablespoons all-purpose flour  
  • 2 cups whole milk  
  • 2 cups shredded cheddar cheese  
  • 1/2 cup mozzarella cheese  
  • 1/2 pound Louisiana crawfish tails  
  • 1/4 cup diced bell pepper  
  • 1/4 cup diced onion  
  • 1 teaspoon Cajun seasoning (go light for kids)  
  • 1/2 teaspoon garlic powder  
  • Salt and black pepper, to taste  
  • 1/2 cup breadcrumbs (optional for topping)  

Instructions 

  1. Cook the pasta 
    Boil macaroni according to package directions. Drain and set aside.  
  2. Cook the vegetables 
    In a skillet, melt butter over medium heat. 
    Add onion and bell pepper and cook until softened, about 4–5 minutes.  
  3. Make the cheese sauce 
    Stir flour into the butter mixture and cook 1 minute. 
    Slowly whisk in milk until smooth. Simmer until thickened.  
  4. Add cheese & seasoning 
    Stir in cheddar, mozzarella, Cajun seasoning, garlic powder, salt, and pepper until melted and creamy.  
  5. Add crawfish & pasta 
    Fold in crawfish tails and cooked macaroni. Stir until coated.  
  6. Bake (optional but recommended) 
    Pour into a greased baking dish, top with breadcrumbs, and bake at 375°F for 15 minutes until bubbly and golden.  
  7. Serve 
    Let cool slightly before serving
