CAJUN CHEESY CRAWFISH MAC & CHEESE

Ingredients
- 12 oz elbow macaroni
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/2 pound Louisiana crawfish tails
- 1/4 cup diced bell pepper
- 1/4 cup diced onion
- 1 teaspoon Cajun seasoning (go light for kids)
- 1/2 teaspoon garlic powder
- Salt and black pepper, to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Cook the pasta
Boil macaroni according to package directions. Drain and set aside. - Cook the vegetables
In a skillet, melt butter over medium heat.
Add onion and bell pepper and cook until softened, about 4–5 minutes. - Make the cheese sauce
Stir flour into the butter mixture and cook 1 minute.
Slowly whisk in milk until smooth. Simmer until thickened. - Add cheese & seasoning
Stir in cheddar, mozzarella, Cajun seasoning, garlic powder, salt, and pepper until melted and creamy. - Add crawfish & pasta
Fold in crawfish tails and cooked macaroni. Stir until coated. - Bake (optional but recommended)
Pour into a greased baking dish, top with breadcrumbs, and bake at 375°F for 15 minutes until bubbly and golden. - Serve
Let cool slightly before serving
